AB  - This paper presents an analysis of convective heat load of frozen surfaces. A mathematical  model for determination of "dry" and "wet" heat loads has been formed. The mass heat transfer  coefficient  σ  i s estimated by the  Chilton -Colburn's analogy .  T he impact of re levant  parameters of  convective  loads (flow velocity and relative humidity over ice, the surface temperature of the ice  rink  and the characteristic length of ice rink )  has been analyzed . Finally, measures  for  improv ing  the energy efficiency of the system  has been  highlighted.

AB  - An analysis of the absorption refrigeration system with a solution of LiBr -water as the working  fluid driven by solar energy is presented in this paper. There are given the physi cal and  mathematical models of the refrigeration system including two different types of solar collectors  -  vacuum and flat plate. Calculations of the dynamic characteristics of the system for July of the  typical meteorological year for Belgrade are carried out and some of the most important technical  and energy parameters are analyzed. It is shown that the application of the vacuum collectors  provides many advantages over flat plate collectors.

THE EFFECT OF FREEZING ON THE QUALITY OF BERRY FRUITS

AB  - Berries are a large and economically very important group of fruit. Serbia is not at the top in the  production of this fruit, but is at the top in exported quantities of berries.  Almost the total amount  of berries are exported i n frozen condition. The aim of this study was to analyze the influence of  freezing process on the quality and sensory characteristics of berry fruit. Investigation were carried  out with the strawberry, raspberry and blackberry fruits. Within the sensory qu ality analysis,  special emphasis is placed on maintaining the strength and color of these delicate fruits. As quality  parameters, content of total sugar and acid, dry matter content and pH value s of berry fruits were  analysed. The content of vitamin C in t he berries, before and after process of freezing, were  determined. The obtained results showed that there was  no significant changes in chemical quality  parameters. Somewhat larger changes was  in sensory characteristics, as determined by the loss of  streng th and consistency, especially in strawberry fruit.

AB  - This paper presents the mechanical operations in the processing of grapes in wine-making process. In the software package SolidWorks modeling was performed for certain machines used in wineries and then performed a simulation of these machines. Based on the simulation of machines and harmonizing the operating parameters of the designed model it creates a base and determins all relevant parameters for the final construction of machinery. This procedure reduced the time of making final technical documentation

AB  - More recently the interest for antioxidant properties of food was increased, due to their health-promoting properties. In the analysis of food, in addition to finding the usual quality parameters, one more often determines its antioxidant potential. The present study evaluated the effect of freezing process on raspberry fruits changes. The content of dry matter, total sugars and acids, vitamin C, as well as sensory analysis of quality were determined. Antioxidant potential was measured by DPPH method, testing the ability of DPPH radical neutralization. The results indicate that the freezing caused minor changes in chemical quality parameters. The changes in sensory quality characteristics were higher. The most marked was the loss of consistency, then flavor changes, and the taste of raspberry fruit was some modified.

AB  - Merenje protoka fluida je jedno od osnovnih merenja koje  se  obavlja  u  procesnoj  tehnici,  termotehnici,  energetici   i  mnogim  drugim  oblastima  tehnike.  Zavisno  od  potreba potrebno je odabrati odgovarajući metod, kojim može da se  sprovede merenje na najjednostavniji način, uz dovoljnu tačnost,  i  uz  najmanje  ometanje  tehnološkog  postupka.  Merenje  protoka   pomoću mernih blendi se svodi na ugradnju merne blende u cevovod  kružnog  preseka  i  posredno  utvrđivanje  protoka  merenjem  razlike pritisaka ispred i iza blende. Ovaj metod je veoma čest  u  industrijskoj  praksi,  jer  je  normiran  kroz  standarde  kao  što  su   npr. SRPS EN ISO 5167:2012 „Merenje protoka fluida pomoću  uređaja  sa  diferencijalnim  pritiskom  ugrađenih  u  cevovode  kružnog poprečnog preseka - Deo 1: Opšti principi i zahtevi“ koji  je identičan sa EN ISO 5167-1:2003 ili ASME MFC-14M-2001  „Measurement of fluid flow using small bore precision orifice meters”. Proračunska procedura pomoću koje se izračunava protok fluida  je u važećem standardu SRPS EN ISO 5167:2012 drugačija nego u  prethodnim izdanjima istog standarda 1980., 1989., 1993., kao i iz  1998. Imajući ovo u vidu postavlja se pitanje da li se i za koliko razlikuju izračunati protoci fluida, pa je u ovom radu analizirano nekoliko konkretnih slučajeva. U pitanju su merenja na industrijskim  instalacijama,  kao  i  merenja  obavljena  u  Laboratoriji  za  procesnu   tehniku na Mašinskom fakultetu u Beogradu.

abstract = "Merenje protoka fluida je jedno od osnovnih merenja koje  se  obavlja  u  procesnoj  tehnici,  termotehnici,  energetici   i  mnogim  drugim  oblastima  tehnike.  Zavisno  od  potreba potrebno je odabrati odgovarajući metod, kojim može da se  sprovede merenje na najjednostavniji način, uz dovoljnu tačnost,  i  uz  najmanje  ometanje  tehnološkog  postupka.  Merenje  protoka   pomoću mernih blendi se svodi na ugradnju merne blende u cevovod  kružnog  preseka  i  posredno  utvrđivanje  protoka  merenjem  razlike pritisaka ispred i iza blende. Ovaj metod je veoma čest  u  industrijskoj  praksi,  jer  je  normiran  kroz  standarde  kao  što  su   npr. SRPS EN ISO 5167:2012 „Merenje protoka fluida pomoću  uređaja  sa  diferencijalnim  pritiskom  ugrađenih  u  cevovode  kružnog poprečnog preseka - Deo 1: Opšti principi i zahtevi“ koji  je identičan sa EN ISO 5167-1:2003 ili ASME MFC-14M-2001  „Measurement of fluid flow using small bore precision orifice meters”. Proračunska procedura pomoću koje se izračunava protok fluida  je u važećem standardu SRPS EN ISO 5167:2012 drugačija nego u  prethodnim izdanjima istog standarda 1980., 1989., 1993., kao i iz  1998. Imajući ovo u vidu postavlja se pitanje da li se i za koliko razlikuju izračunati protoci fluida, pa je u ovom radu analizirano nekoliko konkretnih slučajeva. U pitanju su merenja na industrijskim  instalacijama,  kao  i  merenja  obavljena  u  Laboratoriji  za  procesnu   tehniku na Mašinskom fakultetu u Beogradu.",

AB  - An analysis of basic heat and thermochemical operations in wine production and recommendations for the relevant parameters estimation are given in this paper. The analysis and optimization of energy flows for a typical Serbian winery with 5 hectares of vineyards during an annual production cycle is also presented. Values of the required power of the heat exchanger and capacity of refrigeration systems to meet all cooling needs are determined.

AB  - This  paper   presents  influence  of  relevant   operating   parameters   to  performances  of   refrigeration devices as  part of  the technical systems intended  for  ventilating of industrial  storage of refined sugar . For the designed  technical  ventilation system , using  the  method of  "coupling of  performances  characteristics   of  refrigeration   plant  components ",  the  effect  of  evaporation  and  condensation  temperature ,  as  well  as   temperature  and  relative  humidity   of  the  treated   air  are  analyzed .   It   was   also   found  quantifiable    impact    of   some    relevant   parameters    on   energy    consumption.

AB  - A thermodynamic analysis of water – ammonia absorption refrigeration cycle is given in this paper. The refrigeration device includes a rectification column and additional heat exchangers, aimed at increasing thermodynamic efficiency of the  refrigeration cycle. The system scheme and description, calculation procedure  and table containing calculated values are given. The characteristics of the standard reversed cycle with compensation process based on mechanical work are given. It was concluded that, under certain conditions, the absorption refrigeration system can be comparable to the compression machine, if all the measures for improvement of the absorption refrigeration cycle were undertaken.

AB  - U radu je data termodinamička analiza ciklusa apsorpcionog rashladnog uređaja sa smesom litijumbromid-voda kao radnim fluidom namenjenom za prethlađivanje svežeg voća hladnom raspršenom vodom. Dati su osnovni tehnološki podaci vezani za proces rashlađivanja hladnom vodom, kao i šema i opis sistema sa procedurom proračuna apsorpcionog rashladnog uređaja sa priloženom tabelom sa izračunatim veličinama stanja. Date su karakteristike uporednog levokretnog ciklusa sa kompenzacionim procesom zasnovanim na dovođenju rada. Zaključeno je da apsorpcioni uređaj, pod određenim uslovima, može da bude uporediv sa kompresorskom ako se preduzmu sve mere za poboljšanje levokretnog ciklusa apsorpcione mašine.
